  • Dong Ding is one of Taiwan's most popular oolongs and a classic for obvious reasons - it's a tea that retains the mild green flavors of highland oolong along with rich, sweet notes through oxidation and roasting. It is well balanced and is the perfect tea to enjoy throughout the day.
  • Light to medium oxidation gives the tea nutty notes as well as a mild caramel flavor. It retains a delicate, medium body with very little tartness. A good Dong Ding should have a subtle roasted flavor, nothing too overwhelming. The roasting makes it a fine tea to enjoy in the fall and winter. But its medium body is suitable for drinking all year round.

  • The name “Dong Ding” means “frozen peak,” but that doesn't mean that ice can be found on this relatively low mountain, as most tea is grown between 600 and 1,800 meters (tea grown above 1,000 meters is considered “highland tea”).
Brewing Tips:
  • Try to brew white tea with water not exceeding 90-95 degrees. This will allow you to preserve the maximum of useful substances in the leaves and buds. Turn off the kettle before the water reaches boiling point. If you have already brought it to one hundred degrees, let it cool down a bit.
  • For brewing, choose clean filtered water. For this purpose, you can take quality bottled water or purify it yourself, if your home filter allows you to achieve a good result. It is not recommended to take purchased mineral or highly mineralized spring water - such water distorts the taste of tea.
