The classic way of brewing tea:
The classic brewing procedure involves
the following steps:
  • Rinse and warm the dishes
    Warm the water and rinse the teapot/guaiwan/brewpot/mug with it to remove traces of previous brews and any dust. This will also warm up your vessel, which will have a better effect on the flavor of the finished tea.
  • Pour the tea
    Put the brew into a teapot/gaiwan/brewpot/mug at the rate of 1-2 teaspoons (3-7 grams) per 150 ml of water.
  • Rinse the tea
    Pour a small amount of hot water over the brew and drain immediately. This rinsing of the tea will remove any dirt and dust from the leaves and buds.
  • Do the first spill/infusion of the tea
    Pour the brew in hot water and let infuse for 5 seconds to 5 minutes (according to taste and brewing method). The longer the teas are steeped in water, the more of their beneficial substances they will give to the infusion. But beware of over-extraction: if the tea is steeped in hot water for too long, it may lose its delicate notes and become more pungent and bitter.
  • Do the spills
    A good tea can withstand up to 12 brews. Each strain has a unique flavor and the tea is capable of multifaceted flavor development with each subsequent brewing.
